What Is Soy Sauce Marinated Salmon?

If you have never tried soy sauce marinated salmon, it may feel unfamiliar.

Many people outside Korea are hesitant about raw seafood such as shrimp or crab. The texture alone can be a barrier.

I experienced this directly in my restaurant.

An English-speaking customer visited and asked for rice. I recommended soy sauce marinated salmon.

Just for fun, I also served a piece of soy sauce marinated shrimp on the side.

He tried the shrimp first and immediately reacted with discomfort, spitting it out.

But interestingly, he finished all of the soy sauce marinated salmon without hesitation.

That moment made one thing clear: soy sauce marinated salmon is the easiest entry point into Korean-style soy sauce seafood.


Restaurant-Style Soy Sauce Marinade (Base Sauce)

This is the exact soy sauce marinade base used in my restaurant.

It is designed for large batch production, consistent flavor, and easy storage.

Liquid Ingredients

  • 500 ml dark soy sauce
  • 250 ml mirin
  • 250 g sugar (reduced to 230 g if less sweetness is preferred)
  • 250 ml apple juice

No water is added at this stage. This is intentional.

Traditional versions use fresh fruit, but apple juice gives stable and repeatable results.

Seasoning

  • 1 tablespoon Hondashi
  • 1/2 tablespoon MSG (MIWON)

Vegetables

  • 250 g onion
  • 100–125 g garlic
  • 100–125 g green onion

How to Make Soy Sauce Marinade

1. Blend Vegetables

Blend onion, garlic, and green onion until smooth. This step is for flavor extraction, not texture.

2. Combine Ingredients

Add all liquid ingredients into a pot and stir briefly. Sugar does not need to fully dissolve.

3. Boil

Bring to a boil, then add blended vegetables. Boil for about 5 minutes. Foaming is normal. Turn off heat.


Cool and Strain

Cool completely and strain thoroughly, pressing vegetables to extract all liquid.

What remains is your soy sauce concentrate (base marinade).


Soy Sauce Concentrate (Important)

This is not a finished marinade. It must be diluted before use.

Recommended ratio:

  • 45% concentrate
  • 55% water

Adjust depending on taste preference.


How to Make Soy Sauce Marinated Salmon

Container Size

For 200 g of salmon, use roughly 200 g of marinade. A 500–800 ml container is ideal.

Leave about 20% air space.

Preparation

  • Remove skin
  • Slice salmon into thick pieces
  • Place into container
  • Pour diluted marinade over salmon

Optional Toppings

  • Thin onion slices
  • Lemon slices
  • Chili slices

Marinating Time

  • Salmon: 24 hours
  • Shrimp / Crab: 3+ days

Food Safety Notes

Never use freshwater shrimp or freshwater crab.

Use only seafood suitable for raw consumption.

Do not contaminate marinade with used utensils.

Even small contamination can reduce shelf life quickly.


Reusing and Restoring the Marinade

If the marinade becomes cloudy, lighter in color, or slightly thick, it can be restored.

Remove seafood and solids, then boil the marinade again. Cool completely before reuse.

This helps extend shelf life and maintain stability.

If the marinade is still at peak flavor but seafood remains, restoring it early can help maintain quality longer.
